Fantastic! Just what I wanted.I could only find hard red wheat berries locally so this was exactly what I needed for a recipe. These were perfect, when rinsing there was hardly any residue and they were very easy to prepare with no need to soak them first. I followed the instructions on the bag for the water ratio but found I needed to use more water than recommended and cook for longer than 60 minutes, (however I had forgotten to make adjustment for altitude...it may be that the instructions work OK at sea level.) I will definitely be buying more of this product..yum!5My FavoritePalouse Brand Wheat and Grains are the best I have found online. They are Organically grown, non-GMO and you can even see online where your grain or legumes were grown by scanning the tag on the product! There are other brands available but, except in rare cases, the shipping costs to have them delivered are cost prohibitive. Thanks to Palouse, I can get their wonderful grains online and as a prime member can have them delivered to my door in two days. As for the quality... it, to me, is exceptional. I have never found dirt, bugs or pebbles in any of the grains or legumes I have purchased from Palouse and every variety has tasted amazing.5Perfect Easter Wheat Pies (Pastiera Di Grano ) A centuries old Italian traditionThe soft white wheat berries are the perfect texture and flavor when cooked and soaked. Cooking your own wheat berries blows away the canned product of which there are several very good imports from Italy. This is way better than the best imported product I have tasted and at about a tenth of the price. The grain was clean , the packaging perfect and delivery prompt. I immediately placed a second order after my first bite of pie. My only surprise was that the Palouse website doesn't have a recipe for this among the other uses for the product. I'll bet 25% of their sales this April was for Easter Pies. I'm going to send the Mader family who own this farm the recipe.5Love it!There is something magical about this flour. I finally decided to try making one for Thanksgiving this year. I went online to find premium soft white wheat berries, as one of the recipes I looked at suggested white wheat berries were faster to cook. I purchased the 3 lb. bag of Palouse Brand white wheat berries, and finally narrowed down my search of recipes to one that sounded traditional, but easier to make. Well, the pie was a huge success with my husband, and even I loved it. In fact, I think it was better that the two or three pies from Italian stores that I purchased in New York when we lived there (forget about trying to buy one in San Diego, where we now reside). This pie is traditionally made just for Easter, but with my three pound bag of wheat berries, I will be making it way more often. Yes, the berries are expensive, but a great pie calls for great ingredients! Thanks for helping me make this awesome dessert!5Excellent Soft White Wheat BerriesProduct: Palouse Soft White Wheat Berries (Organic Non-GMO)Rating: 4.5 of 5 stars (excellent)I bought a 5lb starter sack as part of a 3 grain assortment, to try out my new KIitchenaid grain mill attachment.QUICK WHEAT VARIETY PRIMER: In general, hard wheat varieties, with their higher protein and gluten content, are best suited for leavened breadmaking, whereas soft wheat varieties contain roughly a third less protein and gluten and as a result are better suited for cakes, cookies, batters, flatbreads and egg-based varieties of pasta. Hard red and hard white varieties are nutritionally comparable and similar in all baking characteristics except one - the white variety is essentially a variant of red wheat with a bran layer that is much lower in tannin, resulting in a flour that is lighter in color and milder in flavor. Commercial "all purpose" flour is a finely-ground ultra-sieved blend of soft white and hard white wheat, so fellow home grinders are advised that if you want to approximate AP Flour, you MUST sieve your flours, and soft wheat will probably be your primary base grain (to which you'll add other flours depending on what you're making). Also note that freshly ground flour is noticeably lower in moisture content than commercial flour purchased in permeable paper bags. Accordingly, plan on needing to increase the moisture content in your recipes by 5%, and then let experience dictate how to finesse that up or down. When in doubt, it's better to err on tht wet side, because working a little more flour into a bread dough is a lot easier than working in more moisture.LIKES:* Excellent quality grain, low breakage, low moisture. Using my Kitchenaid Grain Mill Attachment, I ran it though once on the coarsest setting, then once on the finest setting, which I sifted with a 40 mesh sieve, and then ran the contents of the sieve through a second time on the finest setting, and once more though the sieve. The final flour yield (after double-fine grinding and sifting with 40 mesh) was roughly 84% by weight of the grain used. The resulting flour made good buttermilk biscuits, and the 16% leftovers (mostly bran) I reserved for use in soft oatmeal cookies and hot oatmeal, so there was actually no waste.* The grain is also highly bio-active - after an overnight soak, it sprouted quickly and developed 1/2" tails in a mere 24-36 hrs, so I'm guessing fans of wheat grass will be very pleased. I didn't let mine go that far though - I stopped them at 1/2 inch by cooking them. The bran layer makes wheat berries a bit more chewy than most sprouts, so I opted to cook them by adding them to a split pea soup during the last 10 mins of cooking.* Grown in the USA.MINOR NITS:* PACKAGING (-1/4 star): The grain arrived in a light burlap sack with a plastic inner liner. There was no zip strip, necessitating the use of a box cutter to open the bag, which resulted in string fragments falling into the grain, which I then had to sift out. When I re-order in bulk, I'll be sure to buy in plastic pails, rather than bags.* DUST (-1/4 star): I encountered some fine silo dust, which I sifted out along with the string fragments mentioned above before putting the grain in my storage container.* This not so much a nit as a characteristic of soft wheat in general - it tends to clump more during grinding, so you'll need to periodically tap (read: whack) your grain mill to dislodge any clumps of flour that slow down the flour output.BOTTOM LINE:* Excellent soft white wheat berries that are organic, non-gmo and viable for grinding into flour or spouting. For baking, sifting with a 40+ mesh sieve is recommended, particularly if you like a dough that's as soft smooth and refined as possible using home ground flour. For the most economical value, and convenient storage, I recommend buying large plastic pails rather than the small burlap bags. I'd definitely buy this again, if the price is right.4Tasty breakfast staple you can dress up however you likeI bought this to eat as a breakfast grain. They are tasty: nutty and chewy and filling, pair well with yogurt or fruit, and they're almost impossible to overcook (unlike oatmeal!) Also, the berries themselves are well-cleaned - every now and then I find another random grain/bean, but no rocks or debris. I bought the smaller package and like them so well I ordered a larger bag. I make a big pot of them over the weekend, and then have breakfast ready for the whole week.5Good Stuff!!!I am pleased with the fresh and robust-looking quality of these wheat berries. I bought them to sprout, and then ferment to make the probiotic tonic, Rejuvelac. I have gotten a richer tasting and all-around better quality result with these than I have with any others I have tried. It is evident that Palouse is a high-quality family farm operation that takes pride in its produce and cares about its customers. I will buy from them again.5Healthy, unprocessed wheat and it's delicious!I ordered this to see if my apparent allergy to whole wheat is really to the whole wheat and not to processing. I boiled some of this and it was surprisingly yummy with a little olive oil and spices, just boiled up. My psoriasis, or whatever similar problem, did not seem to flare from eating this! So I believe what I read is true, that when we buy whole wheat flour or products, they are processed in a harmful way. But this true, unprocessed whole wheat is great, a natural and completely different food than what we usually get. I plan to try grinding it into flour and making various foods. This was perfect and fresh.5
