The first time I made it as cupcakes I used very little frosting so it was slightly sweet and super saltyI bought a 6 pack of the gluten free chocolate cake mix and I'm probably going to toss the last two bags. I've made cupcakes and a cake so far and the biggest issue with this is it's way way too salty. It's so salty it's barely edible. I put a lot of frosting thinking that is what I'm supposed to do to offset the saltiness and It's just so overbearing. The sweet helped but barely and seriously I used a lot of frosting.The designers of this mix need to reevaluate the recipe and cut the salt by at least half. It's unfortunate because I had high hopes. Oh well.1Buy these for the delicious and cost-effective brownie-cookies!These make up brownie-cookies so good that even this chocolate-disliker finds her hands in the cookie jar. I make them for my chocoholic 10 year old, who adores them. I buy this by the case so that I always have some on hand. (For years he's taken these cookies to birthday parties, and never feels left out at cake-cutting time!) Gluten free cookies are so expensive; this bag can make up several dozen (if you don't make them large), and I save money. Win win! If you want to make it out of this world, add one can of corn kernels and two cups of shredded cheese. (We use the Mexican four-cheese blend.)REVIEW OF PUMPKIN BREAD: I rue the day I discovered this pumpkin bread mix. It is AMAZING. I turned it into muffins. The directions say the package makes 12 muffins, but next time I'm more likely to put less in each cup and make 15 or 16 muffins. They really poofed up. I have been experimenting with pumpkin lately. I made my own pumpkin muffins and pumpkin bread pudding; that little adventure convinced me that I must only like pumpkin when it's in pie. This mix changed my mind.BE AWARE that the sugar content is ridiculous. The package says it contains 12g of sugar per serving, but it also claims to be 16 servings, despite the fact that it only makes 12 muffins. Seriously, nobody is going to eat only 1/16th of the finished product. It's just way too good. It's also very light and not at all filling. If you do make 12 muffins, that's already 16g of sugar per muffin, which is around 4 teaspoons. And if you turn it into bread, that slice is going to be more than the equivalent of one muffin. Just something to be aware of in case you're watching your sugar intake.5Best Corn Bread I've Ever HadThis is the best corn bread I've ever had including regular corn bread. I have taken it to potlucks and received rave reviews. It's light and fluffy on the inside and lightly crispy on the outside. And so delicious. The package offers ideas for making it even better (add cheese, corn and/or sweet peppers) and suggestions for substitutions such as using coconut oil instead of the butter. I first found this product in the stores but then all of a sudden the stores stopped carrying them! All 3 stores I go to carried other Pamela's products but not this. I was concerned they stopped making it. I didn't ask the stores about it but I wrote to Pamela's and they seemed to know nothing. So as usual, when I can't find something in the stores I go on Amazon. I had to do a little shopping around, one place was willing to sell me a bag for $45.00. I found a couple of places that sell a 6 pack for a reasonable price. I buy those.5lackingI have actually ordered this twice, the first case my mother baked for an event we were attending. I thought the cornbread was delicious when I tried it, but the next day it tasted seriously rancid. I emailed the company to ask if this was normal and they claimed it was not, and since I said it was delicious the first day there was nothing they could do about it. So I tried it again, this time is was Very bland and just not very tasty when I made a batch. So I called my mother and it turns out she had to add a bunch of seasonings and such to her batch. Also today (after baking the cornbread yesterday) it has the same awful rancid smell. Someone around here always has a birthday or something (any excuse to bake one of these cakes, yum).5Great corn breadThis is great corn bread - gluten free or not it just tastes good! When I shop for GF food that is what I want, not "this is good for GF" - I just want "this is GOOD". And that is what you get with this corn bread. You can serve this to people and they will never know it is GF. I served this on Christmas eve and everyone loved it - including one very picky person who "hates" gluten free food - in fact she went back for seconds and thirds! I've made these into muffins for an easy on the go breakfast too. Pretty simple to make and turns out very moist and tasty. Def. recommend these. Much cheaper than buying at my local health food stores.5The best GF cornbread I've foundThe best GF cornbread I've found, so I have it on subscription. I fix double batches for family holiday dinners and always hear "any more cornbread?" until it's gone. That's necessary because (like many GF products) it startes getting soggy by the next day. If you wait to long, you will be really unhappy with yourself for letting it spoil. I have frozen some and it was still good, but not like when freshly made.I follow the recipe (sometimes substituting milk, adding corn, or adding cheese and usually cook it in an 8X8 pan. In my oven (which is usually accurate) it takes substantially longer than the time estimate on the box. This cornbread is much better overcooked than undercooked, so take that into account. Also, understand that following the recipe, this is not a savory cornbread, it is fluffy (cakelike) sweet & buttery. I have never tried making it without the sugar, but would guess that it wouldn't turn out like the hard skillet cornbread my mom used to make.5my FAVORITE gluten free cornbreadThis is my FAVORITE gluten free cornbread and I am on a strict gluten-free diet for medical reasons... so its VERY nice to actually have something this tasty to eat. I add in sweet corn kernels which makes it extra special. Even my husband (a wheat eater) looks forward to eating this cornbread and always asks when I will be making it next. Just make sure you do not over cook it or it will be too dry and crumbly. Always check for done-ness with a toothpick or knife as the cooking time will greatly vary (at least in my experience). Also, I found the mix a tad too sweet so I half the amount of sugar I put in it especially because I am adding in sweet corn.4
